Dehydrated pineapple is definitely a concentrate of Vitamin C and mineral salts.  Other vitamins we find on it are: vitamin A, provitamin A, vitamins B, C, E, J and K.

Finally, we can find a considerable content of Betacarotene, magnesium, phosphorus, potassium, copper, zinc, calcium and sodium. For 100 grams of product we find an intake of 40 Kcal.

 

 

INGREDIENTS:

  • 1 pineapple
  • 5 Chinese spices (cinnamon, fennel seeds, star anise, cloves, ginger or white pepper)

At home:

Core the pineapple and slice it evenly into 1/4″ to 1/12″ thick rings and then cut them in even pieces

Flavour the pineapple chunks with the 5 spices just before the drying process. 

Set the dryer to 135°F/60 ° C or the oven to 170°F/75 ° C. Dry for 10-15 hours, or until they are completely dried to the touch.

Once drying is complete, store them in an airtight container.
