This rich flavoured, thick vegan stew will taste like you spent hours making it, but it comes together quickly with frozen vegetables and canned lentils. And because it is so simple, but tasty it is one of my way to go camping recipes! Especially when I arrive at campsite and it’s quite late.
INGREDIETS:
- frozen or fresh mixed vegetables
- 1 can of lentils
- 1 Bottle of passata
- 2 cloves of glarlic
- chilli flakes (optional)
- Salt & Pepper to taste
- 1/2 tsp of curry
- 1/2 tsp of garam masala
- 2 tsp of veggie stock (homemade)
- Hand full fresh coriander

Rinse the lentils.
Heat the oil in a large pot; when the oil is hot, sautee the garlic and add some chilli flakes if you like spicy food.
Add the veggies – I have used frozen veggies; when I’m short on time, I like to use them as they take off the hustle of peeling, cleaning and chopping! Sautée the veggies for one min and then add the lentils.
Add some spices. I have used: curry, garam masala, salt, pepper and veggie stock.
Mix everything, add the passata, and let it cook for about 10 minutes or until the passata is cooked and thick.
Add the coriander before serving. I have used the dry one, but if you have fresh coriander will be much tastier!
