These biscuits reminds me of my grandmother. Apple cookies are dedicated to those who want to indulge in a moment of sweetness after a hard hike with a cup of tea or hot chocolate during the coolest afternoons, but also to all those that can’t resist a little greedy whim at any time of the day and in any season of the year. Bonus? They are so easy to make!



INGREDIENTS:

  • 2 apples (red ones)
  • 1 cup shredded coconut 
  • 1 cup oats
  • 1/2 cup almond meal
  • 1 overripe banana
  • 1/3 cup raisins
  • 1 egg
  • 1/4 cup coconut oil
  • 4 tbsp maple syrup/ honey
  • 1 tbsp cinnamon
  • Dash of vanilla essence

At Home:

In a blender place the apples and blend till well chopped (not pureed)

Then, add banana, eggs, cinnamon, vanilla, maple syrup and melted coconut oil and blend until everything is well mixed.

Add oats, shredded coconut, almond meal, raisins and mix until well combined. 

Shape the mixture into cookies and lie them on a baking sheet and spread out evenly. 

Cook in the oven at 180°C for about 40 min or until golden.

On Trail:

…just enjoy them!

If you eat them for brekkie, you can crumble them and add some coconut milk (powdered)!
