This chicken curry is the easiest but most delicious recipe, for a tasty, healthy and fulfilling dinner on trails.

INGREDIENTS:

  • 75gr (1/2cup) uncooked rice
  • 100gr raw chicken
  • 250 ml coconut water
  • Curry powder to taste
  • 1 spoon coconut oil
  • Salt to taste

At home:

Slice the chicken in cubes.

Melt the coconut oil in a frying pan or a wok over high heat.

Add the chicken, cook it, turning it till it is golden. 

Reduce the heat to medium high, add the coconut water. Keep cooking and then add the curry powder. Add salt to taste. Cover and simmer for 15-20 minutes or till is chicken is tender.

On the said cook some rice in half water and half coconut water.

Let the rice and chicken cool down and spread it onto dehydration trays and dehydrate 4-8 hours at 135F, until totally dry.

Pack the rice and chicken, and a small container of olive oil.

On Trail:

Place the dehydrated rice and chicken in a cookpot add enough water to just cover – about 2 cups. Let it soak for as long as you can, warm it up and top it with olive oil.  For perfect texture, If you can let soak for longer the chicken, then add the rice.
