These easy pancakes are my ritual pancake recipe. They are super fluffy and super soft and you can add the fruits you like the most.

In this specific recipe I have used: strawberries and papple. What is papple? Papple is a cross between Chinese and Japanese pear species and it has a mild sweet low acid flavour with a crisp juicy texture and has a tropical flavour.

INGREDIENTS:

  • 250ml milk
  • 2 eggs
  • 2 cups self raising flour
  • 1/4 cup protein powder
  • fruits you like as topping

At home:

Whisk the eggs and milk, the flour and the protein powder, and beat until the batter is smooth and lump free.

Heat a non sticky pan and melt some coconut oil, place the fruits and quickly pour the batter in the pan and cook till golden brown, flip and cook the other side.

Repeat till you finish your batter.

Dehydrate @45*C/110*F for about 2 and a half hours. Turn over the pancakes  and dehydrate for another 2 1/2 hours.

On trail:

Let soak your pancake in water or milk (powdered) overnight, Once they have fully absorbed all of the water/milk enjoy them cold or warm everything up in your pot.

I also enjoy them as biscuits when they are no hard rock solid.
