Fruit Leather is an ideal food for those who need to recharge their batteries: while hiking. Fruit leather is a food that, after drying, becomes at least twice as caloric as fresh fruit, therefore a concentrate of natural energies. It last forever and it is low volume and weight. Rich in fiber, it promotes intestinal transit and serves to make it more regular daily appointment with the bathroom.

INGREDIENTS:

  • 5 apples (red are better)
  • 3 teaspoons cinnamon
  • 1/2 lemon juice
  • 1 lemon skin
  • few drops of vanilla essence
  • 1 cup of water

You can add some honey, maple syrup or dates if you like it extra sweet. ..Anything but processed sugar! 😉

At Home:

Place all ingredients in a saucepan.

Bring it to a boil over medium-high heat. Keep boiling over medium heat. Stir frequently with a whisk. Cook for 10-15 minutes until apples are very soft and cooked. Once cooked remove the lemon skin.

Pour the rest of the cooked ingredient in the mixer. Mix them till they are a puree – Start the machine, slowly increase to maximum speed.

Line the puree on drying or baking trays with parchment paper. Spread it out evenly.

Make sure to scrape down the sides of the blender or food processor bowl with a spatula to get everything into the dehydrator tray!

Set the dryer to 135°F/60 ° C or the oven to 170°F/75 ° C. Dry for 3 hours, or until the fruit puree is dry to the touch, or cook for 2-3 hours, or until the puree is sticky but does not stick to your fingers.

Once drying is complete, slide the parchment sheets across a work surface and cut into strips 8cm wide and the entire length of the puree, if you don’t use reusable try papers you can avoid removing the parchment paper.

Roll up each strip tightly and store in an airtight container.

On Trail:

…just enjoy them!
