Who said that you can’t eat healthy while car camping? Below a tasty but healthy recipe for when you are out in the bush relaxing.
Ingredients
- 1 cup of paleo granola
- 2 tbsp of coconut milk powder
- 1 tbsp of almond butter
- 1 cup of fresh mixed berries
- 3 cups coconut flakes
- 1 1/2 cups almonds
- 1 cup pepitas
- 1/2 cup sunflower seeds
- 2 tbsp chia seeds
- 1/2 tsp ground cinnamon
- 1/8 tsp ground cardamom
- 1/2 cup honey
- 2 tbsp coconut oil
- 1 tsp vanilla extract
At Home…
In a small pot mix the honey, coconut oil, vanilla extract, cardamom and cinnamon. When you obtain a pourable mix (about a minute) mix all the other ingredients in a big bowl.
Once it is all well mixed, spread the mixture evenly on a baking sheet and cook it in a preheated oven for about 20 min or till golden brown.
At Campsite…
In a shaker mix your coconut milk powder and pour it on top of the granola, add your berries and the almond butter.
Literally just easy as that!
